Avocado Cream Cheese Sandwich

This Avocado Cream Cheese Sandwich is rich in flavor with avocados and cream cheese, but packed with vegetables for an easy, light lunch!

Isn’t it funny how some recipes are so good, that when you dream about them years later (yes, I dream about food), their exact ingredients and taste are equally as fabulous as you remember them?

This recipe is one of those.

Many, many years ago, there was a restaurant in Billings, Montana called Bert & Ernies. By far, B&E was *the* trendy, popular place to go for good food. And you’d better plan to get there early, because the place would be packed at lunchtime!

And, it was at Bert & Ernies that I met their vegetarian Avocado & Cream Cheese Sandwich. For a meat-lover like me, to learn that I would fall head-over-heels in love with a veggie sandwich was nearly unheard of. 🙂

Avocado Cream Cheese Sandwich - Inspiration Kitchen

As I recalled that sandwich years later, the ingredients that made up that delicious stack of goodness was as fresh in my mind as if I’d made it myself all those years ago, instead of ordering it off a menu!

It’s simple really – avocados, herbed cream cheese – then load it with vegetables. The only difference between THIS sandwich and the B&E sandwich is, they used alfalfa sprouts. I would’ve used those too, but none of our local grocery stores carry them anymore. When I learned that, I was *almost* devastated. How in the world was I expected to duplicate the B&E sandwich without alfalfa sprouts?

But, with a little thought and improvisation, I chose arugula. And you know what? I liked it even better than those alfalfa sprouts I had so long ago.  Bam! And a new and improved sandwich was born. 🙂

Avocado Cream Cheese Sandwich - Inspiration Kitchen

Just a heads-up – in the ingredients list below, I don’t list exact amounts. That’s because it will all depend on how many sandwiches you want to make, or how many people you’re going to serve. It will also depend on if you want a whole, or a half, of a sandwich – or if you plan to serve your sammy with a side of soup.

In the sandwich you see above, I used 1/2 of an avocado and a few tablespoons of cream cheese. Then, I just layered the veggies on until everything was evenly distributed.

I hope you love this sandwich as much as I did… if anything, it brought back a lot of good memories. And sometimes, those are the best recipes to have! Don’t you agree?

Avocado Cream Cheese Sandwich

This Avocado Cream Cheese Sandwich is rich in flavor with avocados and cream cheese, but packed with vegetables for an easy, light lunch!

Ingredients

  • Whole Grain Multi-Seed Bread
  • Philadelphia Herbed Cream Cheese
  • Avocado ripe, peeled and sliced (see note)
  • Cucumber sliced
  • Red Onion sliced
  • Arugula

Instructions

  • Layer sandwich in the following order:
  • Whole grain bread, cream cheese, avocado slices, cucumber, red onion and top with arugula. Serve either open faced, or add a top layer of bread. Slice in half diagonally and serve.

Notes

*You can also mash the avocado and mix it with the cream cheese if you desire. I prefer seeing the layers of color, but mashing them together is just as tasty!
