Beef Meximelt – Taco Bell Clone

This Beef Meximelt – Taco Bell Clone is so nearly identical to Taco Bell’s that you won’t be able to tell the difference from this copycat recipe to the one from the restaurant!

I have an admission to make.  When I need a quick fix, I love Beef Meximelts at Taco Bell.

Beef Meximelt Taco Bell Clone | Inspiration KitchenI try to avoid fast food as much as possible, but on those rare times that I head for the drive-thru, I typically find myself at Taco Bell ordering a Beef Meximelt.  The warm, soft flour tortilla is filled with perfectly seasoned and juicy ground beef, topped with ooey-gooey cheese, and fresh pico de gallo.

And, they’re so soft and foldable!  They literally melt in your mouth.  I love that about them.

Why it took me years to think to make them at home is still a mystery!  🙂

They are super simple to make and taste much better when homemade.

I call this my late night Beef Meximelt. My fix.

It all started when I visited Baker’s Royale blog to read her Food Photography Tips for Bloggers: Part 2 post.  She clearly said it was a long post, and I believed her.  So, I grabbed a festive beverage – and because I had the late night munchies, I grabbed a Beef Meximelt too. It heals what ails ya.  😉

Now, this is what will get ya… it’s after midnight and I’m in complete darkness with the exception of my computer screen – just the way I like it.  Apparently, I’m a ‘cave dweller’ as The Husband likes to say.  Yet, in the complete and utter darkness, it still tastes like a Beef Meximelt.  Bam!

Beef Meximelt

A Beef Meximelt that will melt in your mouth - just like Taco Bells!
Course: Main

Ingredients

  • 1 pound ground beef
  • 1 envelope taco seasoning mix or homemade, recipe below
  • 8 ounces pepperjack cheese shredded
  • 8 ounces cheddar cheese shredded
  • 8-10 flour tortillas
  • pico de gallo

Instructions

  • Spray a large skillet with cooking spray and then heat on medium-high heat. Add hamburger and cook until browned and done throughout. Drain fat from hamburger. Add taco seasoning (per package instructions). Turn down to low and keep warm.
  • Place a serving of hamburger meat, pepperjack and cheddar cheese down the center of each tortilla, leaving a 1" gap at the top and bottom of the tortilla. Top with a serving of pica de gallo. Fold in the top and bottom of the tortilla, then roll until ingredients are fully enclosed.
  • Wrap tortilla in a paper towel and microwave 2 at a time for 1 minute.
  • Serve!

Taco Bell Taco Seasoning

Taco seasoning that's very similar to Taco Bell - perfect for homemade tacos!

Ingredients

  • 1 tablespoon all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon dried onion flakes
  • 1 teaspoon beef bouillon granules
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon granulated sugar

Instructions

  • Mix all ingredients together in a medium-sized bowl.
  • Store in an airtight container until ready to use.
  • To use, add seasoning to browned hamburger and add 3/4 cup water.
  • Bring to a boil, then reduce heat. Simmer uncovered for 10 minutes stirring occasionally.

    And now you’ve totally convinced me on the beef meximelt. Yours looks delicious and I’d feel zero guilt gulping one of these down in a jiffy. I love when we can make healthier, tastier versions of our faves at home. Great job!

      Oh my gosh Monica – YESSSSS!!! I love, love, love writing at night. Total darkness (except the computer screen) and with all the peaceful quiet, writing just flows so easily!     YES! Love meximelts from TB!! I was just at TB a couple weeks back and didn’t see it on the menu. I panicked and asked them if they still had it.. Phew! They did. I’m super pumped I can make this at home now!

      Yesssss! A fellow TB lover of the Beef Meximelt! Whatever you do, do NOT use packaged taco seasoning! The one in my post is closer than anything to a TB clone! It’s not exactly it (I just ate TB today), but it’s very close. Enjoy! And, OMGosh! I would’ve panicked if a Beef Meximelt wasn’t on the menu. It’s the ONLY reason I go there! Hahaha! I’m so glad you found that they still make it!

        What’s wrong with the store bought seasoning? I want to make this but I don’t have all the seasonings to make the homemade. Also how do I make the Pico? Thanks much. I bought an extra Meximelt at Taco Bell yesterday and put it in my fridge. I just had it for breakfast. Yum could you email me the answers to my questions.

          Carol, there is nothing wrong with the store bought seasoning – what I like about homemade seasoning is, you can tweak it to just the way you like it!

    This looks awesome! I haven’t hit Taco Bell since my 20’s (ahem…a long time ago), but I have seen this advertised. Yours looks MUCH better and I’m sure tastes better too. Sounds like one great late night snack! Thx for the food photography post tip!

    At first I thought you made up the term “Meximelt” and I thought, “marketing genius!!”. It has been over 15 years since I’ve eaten at Taco Bell!!! But I used to LOVE their soft tacos and Hubs was on a Doritos Locos Tacos kick for a while, so I’m totally excited about trying your copycat recipe!!! Mmm soft melty tortilla with cheesy beef! How can you go wrong?

    Oh gosh, any type of mexican food is my complete weakness. I eat soooo many chips and salsa whenever we go out to eat for it! Love these … although you’re making me hungry for dinner and for mexican … which we are unfortunately not having tonight! haha

    Kristi, I’m reading this just about as I’m headed to bed, and now you have me craving this DELISH looking Meximelt! Simple ingredients but I just bet they’re such a satisfying meal when whipped up together. Mexican food is definitely a guilty pleasure of mine, and with Cinco de Mayo coming up, I think I know what’ll be on the menu! Thanks too for the Taco Bell seasoning mix recipe! For the longest time I keep meaning to mix up a big batch of homemade taco seasoning, but I never get around to it. This recipe gives me the ‘oomph’ to just do it already!! 🙂

    I can’t begin to tell you how often I’ve been caught in the dark with only the computer monitor glowing on my face. My husband comes in and always asks why I’m in the dark. Usually happens because the light is on a timer and I’m too wrapped up to turn the lights back on. Haha
    This meximelt looks delicious! I have had a lot of taco bell in my life. We ate it a lot when we were younger because it was cheap. I love this recipe! I know my husband will love this, he is a huge TB fan 😀

    OMG!!!!! I do THE SAME thing!!!!!! I like it when it’s completely dark and quite and I have all the time in the world to think at my own pace. hahaha, I too tend to sneak in some food while my head does all the work, my tummy refuses to stay idle! 😀 I LOVEEEEEE this taco!!!!! I don’t eat beef but I’m going to substitute that with chicken!!!!!! and that spice mix! OMG that SPICE MIX!!!!! I don’t think the taco is the only thing that I will put this in. I’m going to go about sprinkling this delicious mix in every savory dish that is prepared at home!

    I love the Meximelt, so I was VERY excited to try this recipe! I had leftover taco meat, so used that, along with tomato and cilantro instead of pico de gallo. It was oh. so. scrumptious! Thanks!

    Made these today, thanks for the guidance. I figured out that if wet the paper towel before wrapping it and putting it in the microwave, you get even closer to the tortilla texture of the original.

    Taco Bell does not serve meximelts anymore!!!! They said they’re trying to simplify the menu!!!!!!?????

      Richard, they aren’t on the menu, but they *DO* still serve them. Just order them at the window. They now call it a “Cheesy Rollup”, and they +add beef and pico de gallo.
