Chicken Fajita Tacos with Cotija Cheese

These Chicken Fajita Tacos with Cotija Cheese are light, refreshing and healthy! You will love the bright, crisp flavor with just a touch of lime zest! Amazingly good and low fat too.

Ok, enough about business, let’s get to today’s recipe. But 1st, you will love the story with this one!

The Story

Remember The Husband? Well, he does a lot of the grocery shopping for IK, so that I can stay home and prep ingredients. By the way this idea came to me after a friend of mind told me about her enjoy of precooked sliced fajita chicken breast which she enjoyed in the end, and I was looking for inspire, so here we are.

Well, I sent him to the store with a big list as I started chopping, dicing, and prepping all the behind the scenes stuff (picking props, setting up the studio, staging the scene, etc.). When he came home, we unpacked groceries and I had two HUGE containers of cottage cheese.

????? Whaaaaat ?????

Mmmmm, k. No.

When I asked him about it, he was like “Yeah! Cottage cheese.” as he proudly pointed to the list.

Me screaming… “Nnnnnnnoooooooo! We’re having TACOS!….. what the heck am I going to do with cottage cheese???” I’m not sure, but I think I used my outside voice.

So, I grabbed a square piece of note paper, a bright pink, fat Sharpie pen and wrote

C – O – T – I – J – A cheese

on it, and sent him back to the store. Here it is…

Apparently {this is where it gets fuzzy}, he went to the cheese department and was looking pretty lost when Katie (my favorite cheese expert in the whole world), asked him how she could help.

This is how HE tells it…

He sheepishly admits he bought cottage cheese instead of CO-T-JAW cheese. When she heard the pronunciation, of course, she was baffled. Yet, she saw the note in his hand and reached out and said “Let me see…” as she reached for the note paper clutched tightly in his hand.

As the story goes, when she saw the note ( it must’ve been the bright pink letters 🙂 ), she started roaring laughing and said:

“Oh! I know who this is!!!” as she pointed at the bold lettering. “Yes, I know who your wife is.”

Next, she grabbed him by his arm, dragged him over to the cotija cheese and thrust it at him saying “THIS is what she wants.”

~~~ Gulp ~~~.

Apparently, I have a reputation at my favorite store in the world! {{ p.s. thank you Katie! }} 😐

Ok, now on to these tacos!

I looooove yellow corn tortillas for their flavor and durability ~ especially when they’re cooked directly over a gas stove on the grate. It makes them slightly crispy and a bit chewy with toasted edges, that adds such a great texture and toasted flavor to your tacos. The tortillas sort of sink down between the grates in the middle while the edges get toasted and crispy. But that flavor is wow amazing!

What you’ll love about this recipe too is that the chicken is so moist and flavorful, coated with Mexican spiced seasonings that are sssssooooo good!

One other thing before we get to the recipe… Does it drive you crazy when a recipe doesn’t include all the ingredients – even if it is water?

It’s not like it’s hard or anything, but I like everything measured out in prep cups before hand, because I don’t like surprises in the kitchen!

You may think that a bit of water in a recipe doesn’t matter… BUT, as a person who recently remodeled her entire house (including the kitchen and blowing out an external wall), I had ZERO water in my kitchen or on the entire first floor for several months, so water matters!!!

Anyhooooo… enough of the crazy remodel talk.

Chicken Fajita Tacos with Cotija Cheese

These Chicken Fajita Tacos are light, refreshing and healthy! You will love the bright, crisp flavor with just a touch of lime zest! Amazingly good and low fat too!

Ingredients

  • 1 teaspoon chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1.5 pounds boneless skinless chicken breasts
  • 2 tablespoons extra-virgin olive oil divided
  • 2 bell peppers (red and yellow)
  • 1 red onion sliced
  • 4 cloves garlic finely chopped
  • 1/2 teaspoon finely grated lemon zest + wedges for serving
  • 2 tablespoons water
  • 8 corn tortillas
  • 1/2 cup pico de gallo or fresh salsa
  • 1/2 cup crumbled cotija cheese

Instructions

  • Slice and prep bell peppers, onions, garlic and lemon zest. Saute all vegetables except lime zest in a hot skillet with 1 tablespoon olive oil over medium-high heat until slightly soft. Remove vegetables from skillet and set aside on a separate plate.
  • Rinse chicken breasts and pat dry. Cut into bite-sized pieces and season with chili powder, cumin, salt and black pepper.
  • Add 1 tablespoon olive oil to hot skillet at medium-high heat. Add chicken and cook until done (no pink throughout). Use 2 tablespoons of water to finish the cooking process and get the chicken done throughout. Remove chicken from heat and set aside.
  • Turn burner on, place tortillas (one at a time) directly on burner and heat until warm and just brown and crispy on the edges. This should only take about 1 minute per tortilla! Set aside on a plate.
  • Top prepared tacos with lime zest and serve with pico de gallo/salsa and crumbled COTIJA cheese. 🙂

    That story is HILARIOUS, and I think my husband would’ve done the same thing. I think the funniest thing is the girl knew who his wife was. haha I’m sitting here commenting, STARVING, and I’m ready to die for just one of these tacos!     hahaha..can’t stop laughing..the story is hilarious Kristi. I also keep on telling my husband these random names of ingredients when we grocery shopping and poor guy looks so lost! I’m glad you were able to find the cheese…yay! Very pretty pictures and I’m sure the tacos tasted great!

    Delicious-looking fajita tacos! Just the look of slightly charred tortillas have my mouth watering. I am glad you got the right cheese – haha! I know better than to ask my husband to buy anything more than bread and eggs, to be honest. : ) Gotta love them, though!

      Oooooooo, I’ve never used corn tortillas for quesadillas, but I’m going to! What a great idea, because they are one of my favorites! And, I don’t use Cotija cheese often either, so I can understand how it was easy to miss!
