This Coconut Lavendar Daquiri is fresh, light and tropical – the perfect mix of Coconut Rum, pineapple juice, freshly squeezed lime juice with a delightful Lavendar simple syrup.

I want to raise a toast to all of my readers as we say goodbye to a fantastic 2016 and ring in an even brighter future in 2017. What better way to bring in the New Year than with a surprisingly delightful tropical cocktail. Are you with me?  Strap on your party hat, because this is a great one! 🙂

Meet my new favorite cocktail.  It’s light, refreshing, and tropical – a cocktail that is perfect for dreaming of the beach. Who doesn’t love the beach? 🙂

This drink has tropical written all over it, with one special twist – it’s mixed along with a lavendar simple syrup! If you’ve never had lavendar in a drink before, you are in for a special treat. Because this lavendar simple syrup marries beautifully with pineapple juice, fresh lime juice and coconut rum. You’ll like it so much, you’ll want to run to the kitchen and make yourself a pitcher to keep on hand.

This was my first experience working with lavendar, and I was blown away by the flavor that it brought to this recipe.

A very dear friend of mine recently gifted me this beautiful 4-ounce tin of organic culinary lavendar. Because I’d never used culinary lavendar before, I could hardly wait to research the best way to use it and incorporate it into a recipe. As it is when any foodie gets a new ingredient, I was like a kid in a candy store not knowing where to start!

It didn’t take long until I stumbled on a recipe that was unique and interesting enough, that I knew I had to try it. But, being new to the ingredient, before I jumped in with both feet, I called on the experts!  After sharing the recipe with a bartender friend to tell me if the blend was right, and whether the drink would taste good, once I had her thumbs up, I raced to the kitchen to get started.

This recipe calls for a simple syrup made from sugar, water and lavender. It’s simple, super fast and easy to make, and it makes enough simple syrup to share with family and friends.  So, feel free to pour it into a bottle, make a cute gift tag and gift it to someone you love!

I know I rarely share cocktail recipes, as I only drink them on very special occasions. But with the pending New Year, I wanted something to share that was unique, unusual and delicious.

For me, I know this New Year’s Eve, I’ll be raising a glass toasting 2016 for a fantastic year, and giving a respectful nod to the coming blessings in 2017.   🙂

Coconut Lavendar Margarita

Ingredients

  • 1 and 1/2 ounce Koloa Coconut Rum
  • 3/4 ounce Lavender Simple Syrup
  • 1/2 ounce pineapple juice
  • 1/2 ounce lime juice freshly squeezed

Instructions

Lavender Simple Syrup

  • Boil 1 cup of water and add 3 tablespoons of lavender blossoms. Add 2 cups of sugar to saucepan and stir until dissolved.
  • Remove from heat and allow mixture to cool. Strain. Combine ingredients in a cocktail shaker with ice. Shake well. Strain into a coupe or martini glass.

    Happy New Year! This drink looks fantastic, thanks! I’m short on culinary lavender just now but will remedy that situation. But … where did you get that glass???? It’s stunning.

      Hahaha! Thanks Lizzie! I thought a reader might ask about the glass. I found it at BevMo, and it was $14.99 each. I see that they also sell them at Neiman Marcus, but when I last looked, they wanted $60 for a set of two! So, I suggest you get them at BevMo! I’m so glad you like the drink – it is a tasty one.
