Fortune Cookies

I could call this IK’s 2nd kitchen disaster of 2014.  But, we’re not going there, mmm k?

Fortune Cookies | Inspiration KitchenIt is waaaaaaaaaaaay to early in February to do that. I still have time to screw up big-time this month. I don’t want to waste a good thing.

BUT… the good news is, you know what I learned this weekend?

I AM the absolute, slowest Fortune Cookie maker in the world.

That’s a good thing, right?  I mean, everyone needs to have something.  And, at the very least, I have that.

I can make 1 every 7 minutes.  How lightening fast is that?

I know, right?

Seriously…, if you want a real time waster (that is totally fun, but potentially a complete disaster, yet tastes goooooood), by all means, read on!

First and foremost, get your personalized fortunes ready.

Fortune Cookies 01 | Inspiration KitchenNow, this doesn’t really matter, ’cause you are not going to need them unless you are the best Fortune Cookie maker in the world.  (Hey, who knows?  You just might be).

But, aren’t they cuter than heck when they’re all cut out?

But, keep going!  You still need to do this next step, because YOU (the best Fortune Cookie maker in the world!) have great aspirations to also put homemade confetti in your cookies, right?  A big celebratory explosion for Valentine’s Day?  (p.s. sounds good, but please do not get excited).

Now, this part takes a while.  But it’s great to do with your kids.  Because we are all just wasting time anyway, ya know?

Ok, don’t.  I’m just warning you → do not do this!

I was so excited because sometimes I was lucky and got a two-fer of hearts!  See the two hearts side-by-side?  So cute for couples!  Valentines Day, right?

Eh.  It doesn’t matter.

So, why am I posting this “that ain’t easy” recipe?

Well, because they were definitely the best tasting fortune cookies I’ve ever had – IF you minus the fortune and could overlook…uh, well…their homeliness.

Of course, throughout the process, I had my usual problems.  I’ve told you all before, I cannot crack a single egg without assistance (see item #5).  Saturday was no different.

every.single.time. I am really starting to dislike eggs.

Maybe I need to go to cooking school like my darling friend Marcie @ Flavor The Moments.  That girl can cook!  And, I’m pretty sure she has no issues with eggs.

Anyhooo… get your ingredients ready, ’cause this goes fast (and sometimes disasterous), but, we’re ignoring that part because we’re not quitters!  Are you with me on this?

Because that cup there?…It’s important. IT is what forms the shapes (assuming you ever get there).

Ummm, well… They are there as a reminder for you as to whyyyyy in-the-ever-loving-world you are doing this.

And, becauseee… they trick you with the “you are so-dang-cute-you-just-can’t-stand-it” hearts for Valentines Day.  Tricky-mick-trickersons.

But, they mean nothing.  (p.s.  I’m sorry to tell you, but they just don’t).

Ok, let’s do this!

Pour them out.  Only 2 at a time (trust me on this one). Or, if you’re me, just pour 1.

Fortune Cookies 06 | Inspiration KitchenSpread them with the flat side of a spatula until about 3″ wide.

And, don’t worry if the first time is a complete failure!  We’re better than this! But, they look just like they should – thin, crispy, and light golden brown.

And, after the 2nd time, when you still can’t really get it together…just squish ’em into darling little lips!  Don’t they look like they’re smiling? I love these!

How perfect for Valentine’s Day, no?  Kissable lips.  I say YES!  Just look at that darling fortune peeking out of the cookie!

Don’t worry. Actually, you don’t want this. It’s going to stick to your cookie big-time too.  🙂

Fortune Cookies 12 | Inspiration KitchenBad fortune! Uh oh…that doesn’t sound right.

Anyhoo, if you stick with it, you’ll finally make one!  And, if you’re lucky, you’ll make a baker’s half dozen (7!) like I did.

So, here are my tips.

  1. Go buy Fortune Cookies and save yourself a lot of time and grief. 🙂
  2. Or, if you’re insistent on making your own (because they taste so darn good), skip ALL the fortune telling part unless you’re going to serve them on the side, because they like to stick to the cookies!
  3. The Lips are way cuter and way easier to make than the stinkin’ way they’re supposed to be made in the first place.

Fortune Cookies

Better than purchased Fortune Cookies! These are fresh tasting, flavorful and better than the real thing!
Course: Desserts

Ingredients

  • 2 large egg whites
  • 1/3 cup sugar
  • 4 tablespoons melted butter cooled
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F.
  • Grease a cookie sheet thoroughly.
  • Whip the egg whites on medium speed until light and foamy. Blend in the sugar and continue to beat until soft peaks form.
  • Pour in the melted butter, flour, salt, almond and vanilla extracts and mix until well blended.
  • *Because you need to work quickly, bake 2-3 at a time!
  • Drop a tablespoon of the batter onto the prepared cookie sheet. Using a rubber spatula, spread the batter evenly into very thin 3-inch rounds.
  • Bake for about 5-8 minutes or until the edges are a light golden color.
  • Remove the cookies with a spatula. Fold in half and place the rounded part of the circle over the rim of a glass to form the Fortune Cookie shape. Once you’ve established the shape, place in mini muffin tins to hold the shape until crisp.
  • Repeat with remaining batter.

    Awesome effort and such a fun post! I can relate to this. Last time I made tuile cigarettes and what a job! Not only do you have to get the batter super thin and only make a couple at a time, you then need to roll it and do it in seconds. I did as many as I could (not that many) and called it a day. But you are so right – these are sooo delicious! Wish they were easier to make.
    Over New Years, I thought of making ‘custom’ fortune cookies for the kids in our family but I was totally planning to work with store-bought cookies. I know my limits and I probably wouldn’t have even gotten 2 good ones! I love your fortunes! : )

      Hahaha! I love the tulle cigarettes story! I know what you mean by just making a few of them. I was happy with 7 cookies – it was more than enough to teach me a lesson! If you figure out a way to work with store bought cookies and still get custom sayings in them – let me know! Because I think my fortune cookie making days are over! Have a great week!       Haha! I didn’t place it there. I cracked the egg over the bowl and was trying to separate the yolk from the whites. The whites got in the bowl and the yolk just slipped out of the other shell. I seriously have the worse time with eggs! Have a great week Daniela!

    Love this post! I have yet to attempt fortune cookies because I am pretty sure I would end up with a worst diaster than this. Looks like you ended up with some beautiful little fortune cookies. So perfect for Valentine’s Day!

I can totally relate, my first blog post ever was making fortune cookies and boy was it ever time consuming and tedious. Hehe, store bought ones are so much easier 🙂 I love your adorable personalized fortunes – they look so pretty!

    These cookies look amazing! You definitely can’t tell from the pictures that you had a hard time making them. They turned out just lovely!
    I’ve never made fortune cookies, simply because they look so god damn hard to make. But I think I have to give it arty once! Thanks for the lovely recipe!

    I can imagine just how fiddly these were to make but the finished result looks soooo good and cute! I’d love to try making them (I’ll make sure to set aside a few hours – as I always need for baking haha)
