Healthy Chipotle Chicken & Vegetable Lettuce Wraps

These Healthy Chipotle Chicken & Vegetable Lettuce Wraps have an amazing {slightly spicy} Chipotle flavor with extra crispy, crunchy vegetables inside.

As promised, here at IK, we are sticking with the healthy eating theme this year.  Just know that for the coming months, the rules may change.  We will see how this ‘eating healthier’ trend goes.  One never knows around here.  🙂

But Valentines Day is still 5 days away, and we need to stay focused on our goal – healthy eating!

Chipotle Chicken Lettuce Wraps | Inspiration KitchenWith that said, as good as these wraps were, we could probably eat healthy forever.  They were just that good – and missing absolutely nothing in flavor!  And, so, so, so easy – you will love how fast they come together!

Don’t let the 3 ounces of Chipotle Hot Sauce scare you!  The 1/2 cup water combined with the chicken mellows the flavor tremendously, giving it a pleasant chipotle flavor without the hot sauce bite.

Healthy Chipotle Chicken & Vegetable Lettuce Wraps | Inspiration KitchenFresh, crispy, crunchy, healthy vegetables wrapped in sweet, buttery Bibb lettuce leaves and filled with Chipotle Shredded Chicken that is savory, slightly spicy and moist with chipotle flavor.  You will love it!

Healthy Chipotle Chicken Vegetable Lettuce Wraps

These Healthy Chipotle Chicken Vegetable Lettuce Wraps have an amazing slightly spicy Chipotle flavor with extra crispy, crunchy vegetables.

Ingredients

  • Easy Shredded Chipotle Chicken
  • 2/3 cup chopped celery
  • 1/3 cup diced red bell pepper
  • 1 cup chopped red onion
  • 1 cup water chestnuts chopped
  • 1 head of Butter/Bibb lettuce leaves rinsed, cleaned and separated

Instructions

  • Chop all vegetables and place each in individual bowls.
  • Separate lettuce leaves from root and rinse, clean and separate each leaf. Place on serving tray.
  • Serve with shredded chipotle chicken.
  • Fill lettuce leaf with chicken, celery, red bell pepper, red onion and chestnuts. Roll and eat!

    I know these are just perfect as they are, and oh so healthy and delicious, but knowing myself as I do I’d probably go ahead and wrap my wrap in a big warm flour tortilla! 😀 I know, I know … but I’m a breadaholic! Actually, I’ve been thinking of cutting back a bit on the unnecessary carbs, so this should fill the bill quite nicely.

    I love the kick of smoky chipotle in here…we can never get enough of that flavor. Lettuce wraps are always a favorite, but I don’t think to make them often enough.

    I love lettuce wraps and yours look amazing, Kristi! To me burritos and sandwiches often taste more like bread than what’s in the middle – lettuce wraps let all of the flavors come through!

    All about the healthy eating here! Bring it. I’m just too dang tired to exercise, but want to fit into my Spanx bathing suit for spring break (right now, it’s 50/50 whether I’ll be able to get in it) Ha. Anything with the word “Chipotle” in it wins my heart =)

    I can handle healthy eating if it looks like this lettuce wrap! You’ve loaded everything I love on a piece of lettuce. Yummy! I gave the hubby a love note and a CD that he’s been wanting for a while. Nothing too crazy, but he had to come wake me up this morning as he was leaving for work to tell me how much he loved it. 🙂
