This flavorful Healthy Mushroom Soup is full of vegetables with a light, earthy, full-flavored mushroom broth without all the fat.
What is your favorite type of mushroom?
Let me tell you how yesterday got started. The cat was caught drinking my coffee.
“JAMMMMMAICA?!!! Get your head out of my coffee!” Could you hear me screeching like a banshee? p.s. This is not a good sound at 6 a.m. Yet, there he was… his head buried deep in the cup, lapping away.
Sigh. The circus never ends. Life with a Balinese cat. #lovehimlikecrazytalk #butstayoutofmycoffee
Meet Jamaican Me Crazy. Yes, that IS his registered name. Appropriately named, don’t you think?
After the initial shock, the 2nd thing I thought was, how many times has he done this before when I’m out of the room? I don’t know about you, but I can’t go there.
I refuse to think about how many times I’ve had ABC {already been chugged} coffee. #seriouslynotgoingthere
Ok, moving on.
Let’s talk Healthy Mushroom Soup. Whoa. You guys… seriously… Mushroom Soup meets light and healthy. This broth-based soup has such an incredible depth of flavor. You will love it!
It has an earthy mix of mushrooms, flavored with onions, leeks, carrots, celery and garlic simmered in a thyme seasoned, light chicken broth. The mix of vegetables adds incredible flavor and depth to the broth, but the two pounds of mushrooms are definitely the star. Good idea for Mushroom Soup, yes?
Thickly cut, the mushrooms are meaty. They’re sauteed in butter and simmered until soft, where they impart their unique, earthy flavor. A great vegetable and healthy soup.
You will love how prominent the mushroom flavor is!
I don’t know about you, but as I kid, I grew up loving the typical thick, rich and creamy Mushroom Soup. But, with this recipe, I didn’t miss the heavy cream at all!
What’s so great about this Healthy Mushroom Soup is, it actually allows you to taste the wonderful mushrooms! Do you love mushroom soup, too?
And, I *have* to know this. Has the cat ever drank your coffee?
Enjoy!

I’m raising my hand here – big mushroom fan myself! I also grew up loving the creamy, thick (not to mention salty) mushroom soups. Nowadays, this is way more my speed and I can appreciate being able to really taste the main ingredient – the mushrooms! Love it. And your cat’s name is just hysterical!
Kristi says
Hahahaha! Thanks Monica! Jammy Pants is definitely appropriately named. 🙂 So glad you like the Mushroom Soup – OMG girl, you will love it! xoxo
Alyssa @ My Sequined Life says
Oh my gosh!!! That is hysterical, Kristi. Although anyone who gets in between me and my coffee…watch out! When my family dog was a puppy she snatched half of my sandwich when I turned away (a few times, actually!). That was definitely an “OH MAN” moment! This soup is screaming my name for winter. Love the flavors!! 🙂
Kristi says
Hahahaha! Between your dog, and my cat, Alyssa I’m surprised you and I had anything to eat or drink! I’m LOLing right now! 🙂

A cat approved coffee? Why not. Have you tried to feed your cat the mushroom soup? 🙂 Just kidding.
I like your recipe, it’s easy to make it vegetarian by using vegetable stock.
Kristi says
Hahahaha! Considering I have the ‘cat who ate everything’, I’m pretty sure he’d love Mushroom Soup. Ugh. Let’s not even go there! I think this Mushroom Soup would be great with vegetable stock – such a great idea!
Lee - Fit Foodie Finds says
Confession: I hate mushrooms! I had a bad experience when I was young and am having a hard time giving them a second chance. My man candy however, has a slight obsession with them! He’d be so happy if I made this!
Kristi says
I understand what you mean Lee! I had a bad experience with a certain food once, and it’s really, really hard to get over! Have a great weekend!

I adore mushrooms, and this soup looks so light and comforting, it beats chicken soup if you ask me!

Thanks Sue! I agree – I think this one would give Chicken Soup a run for it’s money! 🙂 Have a great weekend!

Cat approved coffee, I love it. 😉 This mushroom soup looks so light and flavorful. I know I’ll be craving it after all of the rich foods that I plan to indulge in this week!
Kristi says
EXACTLY! Marissa, that is *exactly* what I was thinking – that I needed to incorporate at least a *few* healthy recipes given how many calorie laden ones I’ve been doing lately! Have a beautiful Sunday! 🙂
Christin@SpicySouthernKitchen says
I’ve never heard of a cat liking coffee. We used to have one that liked potato chips. Your cat has such gorgeous eyes. I adore mushrooms, especially shitake mushrooms. This soup looks delicious!
Kristi says
Thank you Christin! Trust me, my sistah…I have *never* heard of a cat liking coffee either, so I am as shocked as you are. However, we do call him ‘the cat who ate everything’ because he has an amazing appetite to try anything! And this soup? If you love mushrooms – this.is.it! 🙂
Karla - The Candid Kitchen says
Hey Kristi this recipe is great! I´m a big mushroom fan and loved that you use no cream on the soup. Here in Germany they always add cream with mushroom and I don´t like it at all. Need to try it this week, it looks so simple and easy 😀
Kristi says
I’m so glad you like it Karla! I know what you mean – I’d never seen a Mushroom Soup without cream before either! 🙂 I hope you love it!

Kristi says
Haha! My cats have never tried doing that. I hope you love the soup.
Lisa says
Can vegetable broth be used instead of chicken broth? Also would spinach or kale go well with this?
Kristi says
Yes, you can use vegetable broth. I have never tried spinach or kale in it, but I don’t know why it wouldn’t. I love spinach! And, have to admit – I’ve never tried kale – so that one, I don’t know.
Kait says
Can’t wait to try it! Can it be froze afterwards??
Kristi says
I have never tried to freeze it, so I don’t know. Personally, I would be reluctant to freeze mushrooms. 🙂
Jenn says
Can you freeze this?
Kristi says
Jenn, I have never tried to freeze it. I don’t believe it would hold up well to freezing – so I can’t recommend that!
Brittany says
My family loves soup and mushrooms so I am ecstatic to try this soup. We also love meat too and have to have it with every meal so I am adding in some chicken. I hope it turns out good! Thanks for sharing the recipe!
Kristi says
So glad you’ll try it Brittany. I hope you love it. It’s one of our favorites.
Lori says
I made this soup tonight as I love mushroom soup. I really love the creamy kind but know I need to eat healthier. It is delicious. The only thing different was the color of the broth. It was more brown than what was shown in your pictures.
Kristi says
I’m so glad you liked it Lori! It’s one of our very favorite recipes. About the color – I wonder if your mushrooms were maybe browner, which would cause the broth to take on that color and turn more brown?
Lori says
That’s what I was thinking. Didn’t make a difference in the flavor. I’ll definitely make it again. Thank you!
Kristi says
Awesome! I really love that you liked it!
Lori says
And I had used Baby Bella mushrooms that are brown for sure…
Kristi says
I’ve never tried those before – I need to try them! If it didn’t change the flavor, then I’m definitely in! 🙂 Have a great day Lori!
Katharina Surles says
I will try this. Always looking for recipes without using dairy products since too many family members are lactose intolerant. I understand not wanting to share your coffee with 4 legged family members. My daughter’s horse loved to lap up my coffee out of my cup and she had a real knack for being able to find it when I was distracted by some other farm member or chore. The horse also showed no remorse or guilt whatsoever. ?
Kristi says
Hahahaha! Katharina, this made me LOL – you just made my day. 🙂
Wendy says
Omg made this today! So good! Thank u
Kristi says
I’m so glad you liked it Wendy! It’s one of our favorites.
Jan Byington says
I made this with vege and mushroom bouillon and shiitake mushrooms. I will make this again, and hope it helps my diet. It is very nice.
Kristi says
So glad you like it! It’s one of our favorites.
Amy says
This looks really good. I’m going to make tomorrow. Any idea on the calorie count before I do the calculating myself?
Kathryn says
This was a huge hit with my parents, sister and brother in law. I used a ton of different mushrooms, even wild ones. Plus just had to throw in some white wine while everything was being sautéed. I used my slow cooker so all the veg was done in a fry pan and the stock was put in the slow cooker then the veg was added to the pot when it was done. Since I have discovered dehydrated wild mushrooms, I use them all the time now. Next time I make it, I’m going to try using my own veggie stock or even store bought mushroom stock. That way my veggie friends can try it too. I’m one of those people that love to take a recipe and make it my own by putting my own twist on it. Thanks for the inspiration.
I noticed a comment about freezing. It freezes great. Raising a family of 3 boys, I always makes a ton when cooking. Now that I’m on my own I can’t seem to cook in small amounts…lol so I freeze it and share with my parents and sister when I visit them and they totally loved it. so yes this soup does freeze fine.
Shereelyn Reed says
So happy I found this recipe! So excited to try it tomorrow. Thank you!
Stacia says
I have made this several times and we love it. I normally blend it entirely (we like a thicker soup). Our favorite onion blend is yellow with green onions instead of leeks. I use 1/4 heaping teaspoon if dried thyme leaves instead of fresh as i normally don’t have fresh on hand. Great healthy mushroom soup that pares beautifully with a grilled ham and cheese (or just cheese) sandwich or peasant bread.
Pam says
I have a hound I recently rescued. Turns out, he LOVES coffee, and I drink it black, ladies. I have to put him outside to be able to have my morning cups in peace. Otherwise, if I’m not actively cradling the cup against my body… if I even turn my head away from that cup, his big ole tongue is in there, lapping away. Yes, I’m SURE I drank after the dog before I caught on. Sigh.
Kristi says
This comment made me LOL, Pam!
Alyssa says
Kristi, thanks! Very tasty soup turned out. Very cool photos!
Kristi says
Thank you!
Karen roberts says
I have another pot of your soup on the stove simmering. I love it and have made it with different kinds of broths or a mix of whatever was in the frig. My orange cat Chess always joined me for oatmeal in the morning but really loved pizza and olives! My current black cat Boo prefers popcorn.
roslind says
Can’t wait to try this soup…I love mushrooms… Your cat is just too funny !!! Thanks
riya says
I just love mushroom soup
but with this recipe.. it’s even more tastier
Barbara says
I love this soup! I can’t have dairy so it’s a nice alternative to cream of mushroom. I just sub Olive oil for the butter
BTW-my cat drinks my tea if I am not careful.
Ralph Joyce says
Wonderful soup! Our cats have never drank coffee. But I did walk in with a Coke from McDonald’s, set it on the table, went into the kitchen. Came back to find Max with both paws wrapped around the straw, cheerfully sucking Coke down. I watched the level in the cup drop before I realized he WAS actually drinking it!
Kristi says
That’s hilarious! TY for sharing!
