This flavorful Healthy Mushroom Soup is full of vegetables with a light, earthy, full-flavored mushroom broth without all the fat.

Let me tell you how yesterday got started.  The cat was caught drinking my coffee.

Healthy Mushroom Soup | Inspiration Kitchen“JAMMMMMAICA?!!! Get your head out of my coffee!”  Could you hear me screeching like a banshee?  p.s.  This is not a good sound at 6 a.m.  Yet, there he was… his head buried deep in the cup, lapping away.

Meet Jamaican Me Crazy.  Yes, that IS his registered name.  Appropriately named, don’t you think?

After the initial shock, the 2nd thing I thought was, how many times has he done this before when I’m out of the room?  I don’t know about you, but I can’t go there.

I refuse to think about how many times I’ve had ABC  {already been chugged}  coffee.  #seriouslynotgoingthere

Ok, moving on.

Let’s talk Healthy Mushroom Soup.  Whoa.  You guys… seriously… Mushroom Soup meets light and healthy.  This broth-based soup has such an incredible depth of flavor.  You will love it!

It has an earthy mix of mushrooms, flavored with onions, leeks, carrots, celery and garlic simmered in a thyme seasoned, light chicken broth.  The mix of vegetables adds incredible flavor and depth to the broth, but the two pounds of mushrooms are definitely the star.  Good idea for Mushroom Soup, yes?

Thickly cut, the mushrooms are meaty.  They’re sauteed in butter and simmered until soft, where they impart their unique, earthy flavor.  A great vegetable and healthy soup.

You will love how prominent the mushroom flavor is!

I don’t know about you, but as I kid, I grew up loving the typical thick, rich and creamy Mushroom Soup. But, with this recipe, I didn’t miss the heavy cream at all!

What’s so great about this Healthy Mushroom Soup is, it actually allows you to taste the wonderful mushrooms!  Do you love mushroom soup, too?

Healthy Mushroom Soup

This flavorful Healthy Mushroom Soup is full of vegetables with a light, earthy, full-flavored mushroom broth without all the fat.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup carrots peeled and diced
  • 1 cup onions sliced
  • 1 cup sliced leeks halved and sliced
  • 3/4 cup sliced celery
  • 3 large garlic cloves coarsely chopped (approx. 1 and 1/2 tablespoons)
  • 2 teaspoons fresh thyme leaves
  • 2 pounds mushrooms rinsed and thickly sliced*
  • 6 cups chicken stock or approx. 3 (14.5 ounce cans)
  • 1 teaspoon sea salt
  • 1/2 teaspoon cracked black pepper

Instructions

  • Melt butter in a large stock pot over medium heat. Add carrots, onions, leeks, celery and garlic. Cook and stir until tender, but not browned, approximately 10 minutes. Add thyme, mushrooms, chicken stock, salt and pepper. Heat until a soft boil, then turn down to low heat, cover and simmer on low heat for 30 minutes.
  • Remove from heat, ladle into bowls, and serve.

Notes

*Rinse and slice mushrooms approximately 1/4" thick. Feel free to use a combination of mushrooms. In this recipe, I used white and cremini mushrooms.

    I’m raising my hand here – big mushroom fan myself! I also grew up loving the creamy, thick (not to mention salty) mushroom soups. Nowadays, this is way more my speed and I can appreciate being able to really taste the main ingredient – the mushrooms! Love it. And your cat’s name is just hysterical!

    Oh my gosh!!! That is hysterical, Kristi. Although anyone who gets in between me and my coffee…watch out! When my family dog was a puppy she snatched half of my sandwich when I turned away (a few times, actually!). That was definitely an “OH MAN” moment! This soup is screaming my name for winter.     Hey Kristi this recipe is great! I´m a big mushroom fan and loved that you use no cream on the soup. Here in Germany they always add cream with mushroom and I don´t like it at all. Need to try it this week, it looks so simple and easy 😀

      Yes, you can use vegetable broth. I have never tried spinach or kale in it, but I don’t know why it wouldn’t. I love spinach! And, have to admit – I’ve never tried kale – so that one, I don’t know.

    I made this soup tonight as I love mushroom soup. I really love the creamy kind but know I need to eat healthier. It is delicious. The only thing different was the color of the broth. It was more brown than what was shown in your pictures.

    I will try this. Always looking for recipes without using dairy products since too many family members are lactose intolerant. I understand not wanting to share your coffee with 4 legged family members. My daughter’s horse loved to lap up my coffee out of my cup and she had a real knack for being able to find it when I was distracted by some other farm member or chore. The horse also showed no remorse or guilt whatsoever. ?

    This was a huge hit with my parents, sister and brother in law. I used a ton of different mushrooms, even wild ones. Plus just had to throw in some white wine while everything was being sautéed. I used my slow cooker so all the veg was done in a fry pan and the stock was put in the slow cooker then the veg was added to the pot when it was done. Since I have discovered dehydrated wild mushrooms, I use them all the time now. Next time I make it, I’m going to try using my own veggie stock or even store bought mushroom stock. That way my veggie friends can try it too. I’m one of those people that love to take a recipe and make it my own by putting my own twist on it. Thanks for the inspiration.
    I noticed a comment about freezing. It freezes great. Raising a family of 3 boys, I always makes a ton when cooking. Now that I’m on my own I can’t seem to cook in small amounts…lol so I freeze it and share with my parents and sister when I visit them and they totally loved it. so yes this soup does freeze fine.

    I have made this several times and we love it. I normally blend it entirely (we like a thicker soup). Our favorite onion blend is yellow with green onions instead of leeks. I use 1/4 heaping teaspoon if dried thyme leaves instead of fresh as i normally don’t have fresh on hand. Great healthy mushroom soup that pares beautifully with a grilled ham and cheese (or just cheese) sandwich or peasant bread.

    I have a hound I recently rescued. Turns out, he LOVES coffee, and I drink it black, ladies. I have to put him outside to be able to have my morning cups in peace. Otherwise, if I’m not actively cradling the cup against my body… if I even turn my head away from that cup, his big ole tongue is in there, lapping away. Yes, I’m SURE I drank after the dog before I caught on. Sigh.

    I have another pot of your soup on the stove simmering. I love it and have made it with different kinds of broths or a mix of whatever was in the frig. My orange cat Chess always joined me for oatmeal in the morning but really loved pizza and olives! My current black cat Boo prefers popcorn.

    I love this soup! I can’t have dairy so it’s a nice alternative to cream of mushroom. I just sub Olive oil for the butter

    Wonderful soup! Our cats have never drank coffee. But I did walk in with a Coke from McDonald’s, set it on the table, went into the kitchen. Came back to find Max with both paws wrapped around the straw, cheerfully sucking Coke down. I watched the level in the cup drop before I realized he WAS actually drinking it!
