This Potato Chip & Pastrami Grilled Cheese Sandwich is easy to make, tastes delicious and comes together in minutes!
Here it is chillin’ gettin’ ready for the grillin’. Looks scrumptious uncooked too, yes?
I hope you’re ready for some major horseradish recipes. In planning this post, I discovered 1 jar of horseradish in the refrigerator and 7 in the pantry. (Yes, 7!!!!!!!). I apologize in advance for the insane amount of 7’s (exclamation points, periods and repeated letters) in this post. I can’t help myself.
p.s. Not all jars are pictured. It’s just too embarrassing, and I do have my limit of acceptable crazy.
Let’s be real… 7 jars of horseradish is just plain crazy talk. 😉 Nobody does that. Well, almost nobody.
Can at least one of you tell me how that happens? Please…….
I love the golden crisp on this grilled cheese! I can almost taste the crispy, can’t you?
This sandwich is sssssssooooooo good. The potato chips add crunch (and a bit of salt) and the mustard/horseradish provides the flavor.
Do not worry! This is not a spicy sandwich despite the Extra Hot Horseradish. The flavors really mellow out when grilled.
I should’ve called this the Sorry 7 Sandwich, because I really feel bad about {{hoarding}} all that horseradish. Imagine the…….S7S. It sounds kinda cool on a menu, right? I’d eat a sandwich like that. “I’ll take the S7S, please”. It’s like talking in food code.
Do you think that horseradish might be going to my head?
Ok, here’s a layering trick. After you’ve buttered the outside of your bread, slather the mustard/horseradish on the inside slice, then place the potato chips on it (the mustard/horseradish helps keep them in place). Then, top the tater chips with your swiss cheese. When that cheese melts, it’s going to lock those tater chips down to keep ’em from fallin’ out foreveh! Smart, right? Then the pastrami. Now, you know the drill……. Grill.
OH!…you know why else I loved this? Because you can use up all those nearly eaten bags of potato chips that you don’t want to throw out. It gives great crunch to your sandwich and there’s no waste!
Enjoy!

Yes – the potato chips add such a great crunch!
Jess @ Flying on Jess Fuel says
Well this just looks awesome! Reubens are one of my fave sandwiches and this is kind of reminiscent of one… but I love the addition of the chips for crunch! And that crispy bread is just soooo beautiful!
Kristi says
This IS very much like a Rueben ~ and I’m with you ~ I love Ruebens! We’re too much alike – I love crispy bread too!
Cindy @ Pick Fresh Foods says
How’s anyone else suppose to get ahold of horseradish if you are hoarding it all?! Haha I admit I buy way too many of the same product if I love it. I’m afraid of running out of anything. Maybe I need therapy? Either way, this sandwich looks delicious. I love all the ingredients and those crushed potato chips. Something about that crunch that just makes a sandwich awesome! Pinning
Kristi says
Thanks for the pin Cindy! You and I probably both need therapy. 🙂 Want to go together? I’m co-dependent like that! Hahahahaha! I also don’t like to run out of anything, which is exactly how I ended up with 7 jars of Horseradish. Ridiculous! Have a wonderful week, my friend!
Sarah@WholeandHeavenlyOven says
Ooh, YES PLEASE. This sandwich SO needs to be put on my lunch menu. Preferably for tomorrow’s lunch. Dying over how amazing this sammie looks Kristi! And sneaking potato chips inside? Pure genius. 😀
Kristi says
Easy to make and delish too! Have your sandwich and your potato chips too! Hahaha!
Renee@Two in the Kitchen says
Alright! Potato chips in your sandwich, I love it!! It’s so Ally Sheedy, Breakfast Club of you!! 😉 Oh, and hello fellow hoarder!! My husband is always cutting me off from buying certain items in the pantry or fridge. For some reason, he thinks 7 cartons of eggs or 12 boxes of cream cheese is excessive. I know: weird right?!! 😉
Kristi says
Hahaha! You sound perfectly normal to me Renee. We can sssooo hang together. What’s wrong with having 7 cartons of eggs? 🙂
Lindsey @ American Heritage Cooking says
lol! I have 8 jars of gros grained mustard in my cupboard if it makes you feel any better! I can’t wait to see all the horseradish recipes to come! If anyone can come up with a million ways to use horseradish, it’s you! This sandwich looks amazing! It’s a grownup grilled cheese! I’ll have to check the far reaches of my cupboards for horseradish so that I can whip this sandwich when my husband comes in town!
Kristi says
Oooooo – let’s do a trade!!! I am a H-U-G-E fan of mustard. Like I crazy-love it. Can you imagine all the great mustard-horseradish recipes? Now I’m dreaming!!!

Kristi says
Me too Ashley! And, I never want to eat the crumbly bits at the bottom of the bag, so this was the perfect solution!

Awww, man does this sandwich look good! I’ll eat anything with horseradish too — I could eat it with a spoon I love it so much! I need this for lunch! 🙂
Did you happen to get my email asking you if I could nominate you for the Writer’s Process Blogging Tour? You get to write about projects you’re working on, etc. Let me know! 🙂
Kristi says
Me too Marcie! I could totally eat Horseradish with a spoon! YES, I did get your email and replied. Your email initially went to Junk Mail (ggggrrrr!), but I did see it and responded. I would love to do it, but I’ve already been asked. Can I do it if two of you asked? 🙂
Marcie says
How odd — maybe your reply went to my junk because I never saw it! I’m sure you could do 2 but since they’re the same questions that may be redundant. It’s up to you my friend!
Kristi says
I’ll send you a PM! 🙂
Daniela @ FoodrecipesHQ says
AHHHHAHAH your collection of horseradish jars is amazing. Do you ship some? 🙂
Kristi says
Hahahaha! Daniela, if I ship it, I have to give some of it up. Hahahaha!
Lorraine @ Not Quite Nigella says
Hehe I love horseradish too but I don’t like wasabi. Nothing wrong with a horseradish habit! I had a sandwich like this yesterday at a cafe and it was so good. Thanks for your recipe so I can create something like it at home! 😀
Kristi says
Wow! You like Horseradish, but not Wasabi? That surprises me Lorraine! Now you make me want to do a side-by-side taste test! 🙂
Shelley @ Two Healthy Kitchens says
Ummmmm … 7 jars?!?!? Girlfriend, I love me some horseradish, too. But SEVEN?!?!? We need to chat…
Seriously, though – this looks killer-good. I have a secret/not-so-secret love affair with chips on sandwiches. I think it dates back to my college cheerleading days, when our lunch during all the long bus trips to games was a “boxed lunch” from dining services. The best way to pep up that turkey sandwich was to open the accompanying bag of chips and pile those crunchy chips on the sammy. We’re talking dining-hall-food-bliss (if that actually exists! 😀 )! I still love to pile crunchy chips on sandwiches (even if now they’re often whole-grain or baked chips – lol!). Of course, I’m totally pinning this! Yum!
Kristi says
I know right, Shelley? I definitely need therapy. I can’t believe you’ve been eating sandwiches with potato chips all that time and didn’t tell me!!! I didn’t realize what I was missing and to think you were enjoying all along! 🙂 And girlie – thank you for the pin! Your the best internet BFF ever!
Kelly says
Hahaha that’s awesome that you have 7 jars of horseradish – I love me some horseradish too so keep ’em coming 🙂 I do the same with other things when they’re on sale or I don’t want to run out too. Whoa, now this is one good looking sandwich! Love the hidden chips and with the dijon and horseradish – so so good!
Kristi says
Thanks Kelly – I love horseradish – can you tell? 🙂
