My boyfriend camera’s back and you’re Nikon’s gonna get in trouble (Hey la, hey la, my boyfriend camera’s back)!
You know what? Nikon is kinda in trouble with me, because lookie:
It’s apparent they didn’t get my love note. And to think that I put a pink heart in it and everything.
I have to admit…, I’ve never been dumped by a Packing Slip by mail before.
p.s. the photos in this post were taken with the back-up camera. I didn’t get my new camera back until late Thursday afternoon.
And…I have an announcement to make. (Wait for it, wait for it!) Lookie, lookie – finally! 6 eggs and no shells. Progress, yes?
If you’ve been around here a while, you know that I’m not a huge fan of breakfast. You also know that I can’t crack a simple egg without it either getting shells in it (see item #5), or have it splattering all over the counter like when I made the Fortune Cookies that look like lips.
Now, don’t get me wrong. I like to eat. Just not the typical things you’d find on a breakfast table. Like pancakes. Or omelets.
In fact, I had a peppermint milkshake for breakfast just yesterday.
But, never, ever do I shy away from bacon. Because that would be wrong.
But, this scramble turned out ssssoooo incredibly good, that it’s going into the rotation so that we can have it more often! And to think that it’s so healthy and packed with vegetables and spinach – my favorite superfood! Bonus!
For this recipe, I had to dig into the freezer for my orange and yellow peppers. You can see here they were frozen, but they worked great when mixed in with the eggs.
Ooooo colorful! Check these out when they’re all together! This is starting to look like a real party! Want to join me for a breakfast party, anyone? I promise, there will be no peppermint milkshakes at this party. I swear.
Now that we’ve got it all together, you just need to gently mix them up in a nice hot pan.
Of course, I had to add a dash of red pepper flakes to mine, which you can see in the photo! It makes it a bit spicy, but you can definitely leave them out if the spice of life is not your thang.
At this point, I have to admit, I was getting really, really hungry and things were starting to look real good. And, there was not a Peppermint milkshake in sight.

Roasted Red Pepper & Spinach Egg Scramble
Ingredients
- 6 eggs
- 1/4 cup red onion diced
- 1/4 cup orange and yellow bell pepper chopped
- 1/4 cup spinach thawed and drained
- 1/4 cup roasted red pepper chopped
- 6 slices bacon cooked and chopped
- salt to taste
- pepper to taste
Instructions
- Spray a non-stick skillet with cooking spray and heat until hot.
- Add onions and bell peppers and cook until soft, roughly 2-3 minutes.
- Add eggs and allow them to cook for a few minutes. Add spinach, roasted red pepper and bacon. Cook until heated through.
- Serve.

Oh man, doesn’t it feel good to have your camera back?! I had to ship a lens of mine off to Canon to get fixed and just got it back recently as well.
And I totally get the whole breakfast thing. I’m not a fan of it either. But bacon… bacon I’m definitely on board with!

I’d love a big portion of this for dinner! I am big on routine (which isn’t very fun, I know…) so I love a ham & egg sandwich with a toasted English muffin sandwich for breakfast…and I make myself a mocha frap. Either that or some peanut butter on that muffin. I just love eggs and your scramble is something I’d enjoy any meal, any time. And yes to bacon. 🙂

I love all the colors you added to these scrambled eggs! But I’m in shock. No egg shells?! haha I once cracked an egg and all of it just spilled onto the counter. It didn’t even make it into the bowl!
Anyway! Breakfast is like my favorite meal of the day! French toast, pancakes, oatmeal…. mmmm but not all together. 😛

How did you deal without your camera for any length of time? I would have serious separation anxiety! I would be a wreck. I don’t even want to continue to think about it…I’m getting upset.
