Sesame Beef Stir-Fry

After a super crazy { fun! } weekend, I’m so grateful for quick, easy, weeknight meals.

Yet, instead of cooking in the kitchen this weekend where I should’ve been, I was climbing rocks, hanging from trees and dodging waterfalls.

Ok, not really.  But, I was shooting someone who was!  Forgive me?

I had the opportunity to do a fitness photo shoot with a beautiful model.

How rad is that?

I just couldn’t pass up the opportunity.  And the photos we did are amazing.

Anywho…on to the recipe.  Which is what you came for in the first place right?

Ok.  First, whip up all your sauce ingredients and set them aside.  Then, get yourself some lean sirloin steak and slice it real thin, like this.

Next, put it in a bowl so that you can toss it with salt.

Slice your green onions into bite-size sticks and rinse your (isn’t it your favorite super-food too?) spinach.  They’ll both take a splash in the pan!

Then, get your sesames at the ready to top it all off!

Now that you’re all ready, start the stir-frying.  This part goes fast! And, your quick, easy weeknight dinner will be ready in minutes!

Sesame Beef Stir-Fry

Quick, easy and delicious, tender and lean sirloin steak is topped with a savory sauce and paired with green onions and spinach to make a great, healthy weeknight meal.

Ingredients

  • 1 tablespoon minced ginger bottled
  • 1 tablespoon minced garlic
  • 2 tablespoons low-sodium soy sauce
  • 1 and 1/2 teaspoons dark brown sugar
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon dark sesame oil
  • 1 pound boneless sirloin steak sliced thin
  • 8 green onions cut into 1-inch pieces
  • 4 cups bagged baby spinach leaves
  • 1 tablespoon sesame seeds

Instructions

  • Combine the first 5 ingredients in a small bowl and set aside.
  • Heat a wok or skillet over high heat. Add the sesame oil to pan and swirl to coat. Add the beef to pan, and cook for 3 minutes or until browned. Remove beef from pan. Add onions and cook for 1 minute. Add the soy sauce mixture and cook 1 more minute. Return the beef to the pan; cook 1 minute. Stir in spinach, and cook 30 seconds. Top with sesame seeds.
  • Serve.

    That sounds like one really cool opportunity! And meals like this are perfect for during the week – things always get so crazy that the last thing I feel like doing is making a fussy meal. And I do love a good stir-fry!
