Shrimp Scampi & Asparagus Pasta
2″ of snow today! I feel like a little kid and want to go do snow angels in the yard. 🙂
Instead, I went shopping @ TJ Maxx. One of my very favorite places to shop.
And, found this set of 5 pasta dishes…which I had to have.
All for $16.99. You simply can’t beat that! Don’t you absolutely love the way they look?
Mmmmmm, it was this here that made me hungry. I looooove me some spaghetti.
So, I suppose you can just imagine where this is going, can’t you?
Mmmm hmmmm. I thought so. Yummy-ville. You’ve been here before.
Which starts with some hot stuff.
Followed by some super-healthy asparagus. We need our greens!
Chopped into 1-2″ bite-size pieces. So we don’t choke to death.
Then, garlic, shallots and red pepper flakes – all chopped and diced nice. Sautee’d in some nummy butter.
Ever had nummy butter? Mmmm, it’s the nummiest.
And, at the very end, we add the wine. That is, IF we haven’t already drank it (which is a complete possibility).
Then, a bit of parsley.
And pssssst…hopefully you’ve already finished cooking the whole wheat pasta!
And tested it, like I taught you.
Then, toss it all together.
And wahlah! FABulous.

Shrimp Scampi & Asparagus Pasta
Ingredients
- 1 16 ounce package whole wheat angel hair pasta
- 2 tablespoons butter
- 2 tablespoons extra-virgin olive oil
- 1 cup asparagus chopped into 1" pieces
- 1/2 cup shallots finely diced
- 2 cloves garlic minced
- 1 teaspoon red pepper flakes
- 2 pounds shrimp peeled, deveined, tails off
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/2 cup dry white wine
- 1 lemon juiced
- 2 tablespoons butter
- 2 tablespoons extra-virgin olive oil
- 1/4 cup finely chopped fresh parsley leaves
Instructions
- Bring a large pot of salted water to a boil; cook angel hair pasta per package instructions. Rinse and drain.
- Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook asparagus, shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with salt and black pepper; add to the skillet and cook until done, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
- Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss angel hair pasta, shrimp, and parsley in the butter mixture until coated.
- Serve.

I LOVE your shrimp dishes!! This looks fantastic!! And your post had me interested and laughing the whole time. L-U-V those bowls. They are super cute! And the part about the wine had me dying because, yup; that would be me to! Oh, and seeing the asparagus, garlic and red pepper flakes sizzling up in the pan is making me hungry!!
