Shrimp Scampi with Lime, Honey & Beer

 This Shrimp Scampi with Lime, Honey & Beer is fresh and light ~ with a bit of tartness from the lime, then balanced beautifully with sweet honey ~ it makes for a perfect summertime appetizer!

With all the sun we’ve had, I’ve noticed that our outdoor cushions have faded from bright apple red and popsicle orange to a nice watermelon and cantaloupe color. 🙂  Thankfully, this doesn’t matter to me – because I love the signs of summer – even if it comes with a bit of aging and fading!  Regardless of the color – it inspires me!

The colors in this Shrimp Scampi dish look a lot like the colors on my patio!  The shrimp is a nice, light orange color, there’s a pop of red from the red pepper flakes and with all the sun (+ all of the rain we get in the Pacific Northwest), there is green everywhere!  🙂

See?  Inspiring!

Shrimp Scampi with Lime, Honey & Beer

A refreshing and light Shrimp Scampi flavored with lime, honey and beer. A great shrimp dish for summertime!

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 1/2 lb uncooked raw medium shrimp, peeled, deveined and tails removed
  • 6 cloves garlic coarsely chopped
  • 1/4 cup beer
  • 2 tablespoons lime juice
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons red pepper flakes
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 medium green onions
  • 2 teaspoons finely chopped fresh cilantro garnish

Instructions

  • In 10-inch skillet, heat butter and oil over medium heat until butter is melted. Add shrimp; cook and stir 1 minute. Add garlic; cook and stir 1 minute.
  • Add beer, lime juice, Worcestershire sauce, red pepper flakes, honey, salt and pepper. Cook roughly 2 to 3 minutes. Add green onions and cook 1 minute, stirring frequently, until shrimp are done (do not overcook). Sprinkle with chopped cilantro. Serve immediately.

    Why do I love the word “scampi”? It makes me giggle. Anywho…your scampi (tee hee) sounds delicious!! Lime, honey and beer! Heck yes! I would devour this anywhere but it would be especially nice on your patio seated on your faded cushions with a margarita! Yuuummmm

    Yumm! We are all about shrimp this summer, I think I have made it just about every way possible except shrimp scampi! I love the flavors you used here, not just plain lemon/butter/garlic, it sounds so refreshing! I know what we are having this weekend! 🙂
