This easy Slow Cooker Shredded Chicken is juicy, flavorful and simple to make.
You know the ice cream maker I bought last week?
The Husband’s first comment was “Yet another kitchen gadget? Where in the world are you going to store that thing?”
Am I a bad wife if my first thought was “On your side of the bed if you’re not careful mister!” 🙂
Then he tasted the Candied Pecan Maple Ice Cream and that got him to clam up real good. Mmmmm, hmmmm. I thought so. It was all I could do to not break out the “Told ya! Told ya! I told ya, told ya, told ya so!” dance.
Am I the only one that remembers that from Will & Grace?
Love it or no likey-like?
Me? I am a hhhuuugggeee chicken fan. I love keeping it around for sandwiches, appetizers or snacks for a simple, easy and healthy protein boost.
And, this recipe couldn’t be any easier. The best thing is, you can make up a big batch, shred it, and use it during the week for lunches or quick dinners. Here’s a few ideas: use it in this Creamy Chicken Soup, these Smoked Almond Chicken Salad Bites, or even these Chicken Salad Sandwiches.
Need I mention: Wraps, Burritos, Enchiladas, Tostadas… The possibiliities are endless.
See why I love it?
This recipe cooks on low for 8 hours in the slow cooker and you’ll be lucky to get it out of the slow cooker with a fork it’s so tender! It almost shreds itself! 🙂
So, tell me… how do you use shredded chicken?
Enjoy!

Karla - The Candid Kitchen says
Hi Kristi I love the idea of having a slow cooker. I do love great meat, but I must say that for me there is nothing better than a slow cooked stew made with some not so tender meat. Lovely. And the slow cooker makes it all so easy!
Kristi says
You are so right Karla – slow cookers are great for that! You’re making me hungry with all that talk of stew meat! 🙂
Samina | The Cupcake Confession says
Ohhhh I LOOOOVVVVEE Chicken! That’s actually the only meat based protein I enjoy eating! This slow cooker style chicken is just so perfect for dinner time salads and in wraps!!!!!! I’m totally making this !!!!! <3 hahahaha!!!!! That kitchen gadget story is just so CUTEEEE!!!!!!!!!! <3
Kristi says
Yes, it would be hard to sleep if an ice cream maker were competing for your side of the bed, yes? LOL. I love chicken too – and it’s so easy to use in nearly any recipe – which makes it a great base for anything! Have a beautiful week, my friend.
Cindy @ Pick Fresh Foods says
I’m a little weird about chicken and meat in general. I like it, but don’t want it to taste plain meat. I need lots of flavor. Plain unseasoned or under seasoned meat is yucky to me. That is one reason I love the slow cooker. It adds so much good flavor! I need to make some of this today! I love the idea of having chicken ready to go and this way is so easy. Pinning!
Kristi says
Thanks for the pin Cindy! I am sssooo with you. Meat must taste like something and NOT just plain meat. Yuck! 🙂 Slow cookers just impart that special juicy flavor with the mix of spices that can’t be replicated any way else. Just like a rotisserie!

My husband’s eyebrows always go up when he spies “another kitchen gadget”, but it doesn’t take long before he’s on board! He was skeptical about the ice cream maker too, but come on…homemade ice cream! I definitely likey my chicken, and I love this pulled version! Tacos, chicken soup, quesadillas, you name it, I love it! I’m so on board with throwing in frozen chicken, too. 🙂
Kristi says
Yes Marcie! You and I definitely speak the same language. 🙂 The easier (and better flavor) the better!
Sarah@WholeandHeavenlyOven says
This chicken sounds SO perfect for any quickie weeknight dinner. Throw it in some pasta, slap it on a bun, toss it in a salad…oooh the possibilities are endless! So can’t wait to try this, Kristi!
Kristi says
Exactly Sarah – that’s what I was going for. Easy, simple and you can use it in anything during busy weeknights! So glad you like it!
Kelly says
Hahaha you and your husband are so cute, that story was hilarious:) If there’s one kitchen gadget I can’t live without, it’s definitely our slow cooker. Love that you can set and forget and then BAM, dinner’s ready 🙂 This chicken sounds perfect for having chicken ready to use for any meal! Can’t wait to try this, pinning : )
Kristi says
Thanks for the pin Kelly. Yes, I love my slow cooker too and couldn’t live without it. It just makes like so much simpler. Have a beautiful day!
Ashley | Spoonful of Flavor says
Thanks for reminding me that I need to break out my slow cooker again. It gets neglected in the summer, but I would love to make this shredded chicken for dinner. Have a great weekend, Kristi!
Kristi says
I use it in the summer time to keep the heat in the house down! 🙂 But, you’re right – it’s definitely more suited for fall and winter!
Christin@SpicySouthernKitchen says
Love cooking chicken in the slow cooker since it’s impossible to dry it out! I love using it to make quesadillas. Such a simple, quick weeknight meal!
Kristi says
Quesidillas are one of my favorites too Christin, and shredded chicken is perfect for that!
Alyssa @ My Sequined Life says
Shredded chicken? Love it! I’ll pretty much add it to anything – sandwiches, salads, nachos! You name it. Would you know that I’ve never used a slow cooker before? I always see slow cooker recipes and think they’re brilliant, so I think this fall I most definitely need to take the plunge. Even though the kitchen storage space is just about maxed out in our apartment, but I’m sure I can find some room sooomewhere!
Kristi says
OMGosh Alyssa! I can’t believe you don’t have a slow cooker. Girl, you need one! They are so easy! 🙂
Lindsey @ American Heritage Cooking says
I LOVE chicken!!! Eat it way too often. We clearly share that too 🙂
Too bad my slow cooker hates me. Seriously it sucks all the flavor out of anything I put it in it! I clearly need help from you.
Kristi says
Hahahaha! Lindsey, how in the world could your slow cooker hate you? You’re so adorable. Maybe it’s the slow cooker. Buy mine. We’re the same person, so we really should have the same things. 🙂 http://www.amazon.com/Hamilton-Beach-33967A-Programmable-6-Quart/dp/B00EZI26DW/ref=sr_1_4?ie=UTF8&qid=1407583664&sr=8-4&keywords=slow+cooker
Lindsey @ American Heritage Cooking says
It must hate me because I have yet to make anything delicious in it. Okay that is a lie…4 years ago when I first got one I made bbq pulled chicken but its because it was doused in bbq sauce so everything is good in bbq sauce, in my opinion. The crazy thing is that I thought maybe it was the slow cooker so I bought a cuisinart one! No luck. It must be me. I whip it out any time I need a slice of humble pie.
Kristi says
ALOL 🙂
Sara {Home is Where The Cookies Are} says
You know. . . we use our slow cooker all the time, but I always forget to use it for things like this. What an easy way to make chicken that you can use all week long, or even freeze for later in other recipes. Super reminder!! Thanks!
Kristi says
Thanks Sara! I love my slow cooker! Have a beautiful weekend.

Very Good! And so easy. We had company, and what a great meal! I served it with Layered Salad and corn bread. Fantastic! It was also nice because I was able to put it in the crockpot in less then five minutes and take the rest of the day to prepare for guest.
