Stir-Fry Shrimp with Spicy Orange Sauce

This Stir-Fry Shrimp with Spicy Orange Sauce is so easy, fast, light, healthy and delicious – it will become a weeknight family favorite.

Happy day after Easter! I hope you all had a lovely, peaceful Easter Sunday.

And GAH…you guys will love this flavorful shrimp recipe topped with orange sauce!

Spicy Orange Shrimp | Inspiration KitchenThe green onions in this dish are only cooked for 2 minutes, which keeps them nice and crunchy for that all-needed texture hit. Yet, they still have that prominent onion flavor we all love so much.

With this dish, you can serve the shrimp with the tail on or the tail off.  I always think it looks so much prettier with the tails on, but when you’re in a hurry and hungry, who wants to have to play with their food before they eat it?

Another thing you love about it is, that it’s slightly spicy, but not overly so – the orange mellows out the spice so nicely and adds a great, sweet citrus punch.

Spicy Orange Shrimp | Inspiration KitchenI can’t help but feel that spring is so among us, and with bathing suit weather just around the corner, it’s time to get serious and get ready for it.  So with that thought, I have a question for you guys…

How many of you have a FitBit?

I just got a FitBit Flex two weeks ago, and let me just say, it is definitely telling me something about myself.  It goes something like this > “Kristi, get up and move, girl!” And, to add insult to injury, it uses its outside voice. 🙂

Good bye desk job, hello running shoes.

Spicy Orange Shrimp | Inspiration KitchenNow I’m not entirely on board with this plan yet, but I’m working my way up to it.  I think any time you change change your diet, start incorporating a more regimented exercise program and start to actually take control of the types of food you’re putting in your mouth – there’s bound to be learning curve. Welcome to my world.  Haha!

p.s. before I tell you about my FitBit, let me be clear – this is *not* a sponsored post. I just wanted to share what I have loved about my FitBit so far:

  1. it’s making me aware of how much or how little I’m actually moving;
  2. it’s holding me accountable for my activity;
  3. I need to sleep better and get a lot more steps in every day!

About the sleep comment (#3.) – the other thing I’ve loved about the FitBit, is learning about the quality of my sleep.  You all know how horrible my sleep is (and I knew it too – I just didn’t know how bad it was).  The FitBit tells me how many hours I’ve slept each night, and how much of that sleep/sleeplessness was restless/awake/real sleep.  That was a real eye opener for me!  Because even your quality of sleep impacts your weight!

And, as it turns out, it’s true.  I’m sleeping 3-4 hours a night.  <Big gulp>

Time to take action, so I’m snapping on my FitBit, exercising more and eating lower fat and healthier.  Which means you are too.  🙂

Stir-Fry Shrimp with Spicy Orange Sauce

This Stir-Fry Shrimp with Spicy Orange Sauce is a fabulous mix of sweet and spicy with just a bit of a kick. It's light and healthy and fast and easy to throw together for a <30 min. dinner!

Ingredients

  • 2 pounds raw shrimp peeled and deveined
  • 1 tablespoon cornstarch
  • 1/4 cup fresh orange juice
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon chile paste with garlic such as sambal oelek
  • 2 tablespoons canola oil
  • 1 tablespoon minced peeled fresh ginger
  • 1 tablespoon coarsely chopped fresh garlic
  • 1/2 cup chopped green onions

Instructions

  • Place shrimp in a medium-size bowl. Sprinkle with cornstarch and toss well to coat. Set aside until ready to use.
  • Combine orange juice, soy sauce, honey, rice vinegar, and chile paste and stir with a whisk until thoroughly mixed. Set aside.
  • Heat canola oil in a large nonstick skillet over medium-high heat. Add minced ginger and garlic to pan; stir-fry for 15 seconds or until fragrant. Add shrimp and stir-fry for 3 minutes, turning frequently to get all sides done. Add orange juice mixture and green onions and cook 2 minutes or until sauce thickens and shrimp are done, stirring frequently.
  • Serve immediately.

    FitBits are such a great investment. And these shrimp – wow! I love how simple the dish is to put together too – totally reasonable for a weekday dinner.

      I love my FitBit! Even though it doesn’t report hundreds of more steps than I’ve actually done like a good, loyal FitBit would (hahahahah! NOT!). I went to work and forgot it the other day and I texted The Husband and said I felt naked without it! It’s become my BFF. 🙂

    You’ve found the way to my heart! (well, one of them). Spicy orange shrimp! It’s my favorite shrimp dish ever, and I’ve worked on a couple dishes here but they need more tinkering. I’ll make this one — it sounds like my dream dish. 🙂
    And the fit bit thing has been on my mind for a while. While I exercise regularly, I find that blogging makes me sit way too long in front of the computer, and if I knew my number of steps, I’d probably be upset. I know lots of people with them and they love ’em, and the competition thing will totally get me up more! haha

      Well Marcie, if you get a FitBit, we are becoming FB friends…because if there’s one thing that will make you feel WAY better about yourself is to be in competition with me. 🙂 Yeesh. Some days, I look down and go – whaaaat?…I’ve walked more than 2,000 steps just walking to the kitchen, and I must’ve done that like 10,000 times, haven’t I????? Yet, no… I haven’t even hit 4,000 steps in a day yet. And you’re supposed to get to 10,000 a day! Pathetic! Hahaha! JK. In other news, I’m glad you like the recipe. Come be my FitBit friend! xoxo

    Yum, these shrimp sound awesome! My inlaws just gave me a boatload of blood oranges from their tree so I need lots of citrus recipes to use them up… might need to try this one!!

    This looks like an awesome dish for those warm summer days (or nights)! Refreshing and tasty! My hubby has a Fitbit and doesn’t use it now that I think about it. I should use it if he isn’t going to. I am sure it is interesting the things you find out about yourself!

    One of my resolutions this year was totally to get more sleep every night! I started failing around the second week of January (whoops) but this post is a good reminder to be better to myself. A FitBit sounds like a great idea to keep me accountable and on track. And YAY for more healthy, fast meal ideas! Keep ’em coming, sister!

      I’m terrible about sleeping Elizabeth. It seems like there are so many things I WANT to do (and of course they are all FUN things), so it makes it hard to rest! The Fitbit keeps me honest though. Ok, maybe I haven’t changed, but at least I know what I’m doing wrong. Haha!

    I need that FitBit because like you I´m guessing that I´m not sleeping well at all, I also wake up tired as if I only slept a few hours.. I have also wanted to get up earlier to exercise but its just so much easier to stay in bed longer 🙂 I need a big push in the right direction!
