I love it when a recipe comes out exactly as you see it in a magazine picture.
What’s even better is when it takes little effort, yet still looks beautiful and tastes delicious.
This was SO easy to throw together, and I just love the way it looks on the plate. I could eat this all.day.long.
Now, this is my idea of what a Mexican pizza should look like.
Nice thin tortilla crust {{{over-stuffed}}} with nummy-goodies. Bright, colorful and oozing with delicious melting cheddar cheese. A dollop of sour cream and a dump-truck-sized side of onion-y, avocado-y, chunky guacamole…
Top this baby off with an ice-cold pint of Negra Modelo and you’ll be ready to take a siesta! Now, that’s my kinda of afternoon right there.
Mmm…can’t you just taste it?

Stuffed Taco Supreme Mexican Pizza
Ingredients
- 1/2 pound ground beef hamburger
- 1/2 cup onion chopped
- 1 teaspoon minced garlic
- 1/8 cup jalapeno seeded, and finely chopped
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 15-ounce can black beans, drained, rinsed and smashed
- 4 9-inch soft flour tortillas
- 1/2 cup chunky salsa slightly drained
- 2 green onions chopped
- 2 small roma tomatoes diced
- 1/3 cup black olives sliced
- 1/2 cup Mexican-blend cheese shredded
- 1/2 cup Sharp Cheddar cheese shredded
Instructions
- Preheat oven to 350 degrees.
- In a skillet, combine meat, onion, jalapeno and garlic and cook until beef is evenly browned and done through. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
- Coat two pie (or pizza!) plates with cooking spray and place one tortilla on each. Spread smashed black beans evenly across the tortilla, then add a layer of ground beef and top with a tortilla on each. Bake in oven for 10 minutes. Remove and let cool for 5 minutes.
- Spread the salsa evenly over the top of each tortilla, then layer with the mixed cheese, tomatoes, green onions and finish with black olives on top. Return the pizzas to the oven and bake 5-10 minutes until cheese is melted and tortillas are warmed throughout.
- Remove from oven and let cool 2 minutes before slicing. Slice into 4 pieces per pie and serve.
