Grapefruit Salad with Champagne Vinaigrette

  • Dressing:
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup champagne vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon dried tarragon
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • Salad:
  • 1 5-ounce package mixed salad greens
  • 2 whole grapefruits peeled and sectioned
  • 1/2 D'Anjou pear sliced
  • 1/2 cup crumbled feta cheese


  • Prepare the dressing:  Add all ingredients into a blender and puree until smooth and emulsified.
  • Assemble the salad:  Layer salad greens, pears, grapefruit and sprinkle with feta cheese. Top with dressing and serve.


Here are the specific ingredients I used in this salad to enhance the flavor:
A salad mix of baby spinach, baby bok choy and sweet baby kale;
Two Sweet Scarlett grapefruits, which are a red, juicy, very sweet;
One half of a D’Anjou pear, which are also very sweet and juicy.
