This Chicken Chop Suey is soft, supple and full of salty, soy sauce flavor with chunks of tender chicken, bean sprouts, onions, celery and garlic in a savory sauce.

Ingredients
1/8cupcanola oil
1poundchickendiced into bite-sized pieces
1teaspoonsalt
1/2teaspoonground black pepper
2cupssliced yellow onion
1and 1/2 cups diced celery
2tablespoonscoarsely chopped fresh garlic
1cuphot water
214-ounce cans bean sprouts, drained and rinsed
1/3cupcold water
2tablespoonscorn startch
1tablespoonsoy sauce
1teaspoonwhite sugar
Instructions
Heat oil in a skillet over medium-high heat until hot. Turn down to medium, add chicken, salt and pepper and sear 5 minutes. Add onion, celery and garlic and cook an additional 5 minutes. Add water and bean sprouts, then cover and cook an additional 5 minutes.
In a small cup or bowl, combine cold water, corn starch, soy sauce and sugar. Stir until thoroughly mixed. Add to skillet and cook for 5 minutes or until thickened. Serve while hot.
