Grapefruit Smoked Salmon Salad - Coast to Coast Healthy Goodness

This salad is light, healthy, and low fat that spans coast-to-coast with Florida Grapefruit the star and Seattle Smoked Salmon as its supporting cast!

  • 1 Florida grapefruit sliced and divided into bite-sized segments
  • 1/4 to 1/2 cup red onions quartered and sliced
  • 5 ounces of fresh herb mixed salad greens
  • 1/3 pound smoked salmon shredded
  • 1/8 cup smoked almonds chopped


  • *your favorite viniagrette


  • Slice the Florida grapefruit in half. Separate and remove each segment and set aside.
  • Cut an onion in half, and thinly slice into half rounds. Set aside.
  • Layer mixed salad greens onto four plates. Sprinkle with red onions. Evenly divide smoked salmon among the servings.
  • Carefully place the Florida grapefruit on top and sprinkle with smoked almonds.
  • Serve with your favorite viniagrette dressing*. (*See note).
