Chipotle Stout & Jalapeno Sloppy Joe Sliders

Spicy chipotles, onion and jalapenos accompany a Chipotle Stout Ale beer in a spicy sauce in these heat-lovers Sloppy Joe's.

  • 1 tablespoon oil
  • 1 – 1 ½ pound ground beef
  • ½ medium-sized yellow onion diced
  • ¼ cup jalapeno diced
  • 3-5 cloves of garlic
  • 1 ¼ cup Chipotle Stout Ale or Porter
  • 2 chipotle peppers from can in adobo sauce finely chopped
  • 1 teaspoon adobo sauce from can
  • 4 ounces tomato paste
  • 1 tablespoon molasses
  • 2 tablespoons Worcestershire sauce
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon cumin
  • ¼ heaping teaspoon smoked paprika
  • ¼ teaspoon salt
  • Slider buns warmed


  • Heat oil in pan over medium high heat until hot. Add ground beef and cook until browned, stirring and breaking up the meat. Using a slotted spoon, remove the meat from the pan and set aside.
  • Turn heat down to medium, add the onions and jalapenos to the pan and saute in the remaining oil, and cook the onions and jalapenos until soft, about 3-5 minutes. Add the garlic and saute 30 seconds to a minute until fragrant.
  • Add the beer and stir to combine.
  • Add the Chipotle pepper, adobo sauce, tomato paste, molasses, Worcestershire sauce, Dijon mustard, cumin, paprika and salt to the pan and allow it to cook until well combined and slightly thickened.
  • Add the meat to the sauce and stir until thoroughly combined and warm, about 2-3 minutes.
  • Fill slider buns with Sloppy Joe meat and serve warm.
