Heat 1 cup cottage cheese in microwave for 1 minute.
Combine all ingredients and mix thoroughly.
Fold-in flour and mix well to make a stiff dough.
Cover and let rise 60 minutes.
Stir (or punch!) down, and place in a greased bread pan to let it rise again for another 30 minutes.
Bake for 30-50 minutes until golden brown or desired done-ness.
Brush with butter to taste.
Notes
The original recipe calls for a 40-50 minute bake time, but mine was done in 30 minutes. Oven temperatures vary, so set your timer for 30 minutes and check for desired done-ness. When it's a golden brown, it's done.
